Dehydrated garlic slices are neat in appearance, slightly yellow in color and pure in taste, and can be eaten or used as food raw and auxiliary materials. As long as it is soaked in warm water, it can be restored, and it is fresh in all seasons and is very popular in the market.
The processing flow of dehydrating garlic slices:
Material selection--pretreatment--rinsing--slicing--re-rinsing--drying--sieving and grading--packaging.
1. Slice the garlic cloves in the slicer. The blade of the slicer must be sharp. The thickness of the garlic slices is 1.5~1.8 mm, the surface is smooth, and there are no triangular slices or fragments. Thin slices of garlic are fragile and affect the quality of the finished product.
2. The cut garlic slices enter the bubble cleaning machine again for cleaning. By rubbing the bubbles, the mucus and sugar on the surface of the garlic slices are cleaned. The cleaning time is 3 minutes, and the water temperature is kept at about 10 ℃.
3. The cleaned garlic slices should be dried by using a centrifuge to dry the water attached to the surface of the garlic slices to shorten the drying time.
4. Spread the garlic slices evenly in the grid tray of the dryer, insert the grid tray into the material cart, push the material cart into the drying room, and turn on the main unit. During the drying process, the temperature should be controlled between 55 and 75 °C, and the drying time should be 6 to 8 hours. The standard of dried garlic slices is: normal slice shape, white color and moisture content of 4-5%.
Due to the uneven size of the dried garlic slices, the moisture content is slightly different. To achieve moisture consistency, moisture balance is required. Put the dried garlic slices into a plastic bag, tie the bag mouth, and place it on the shelf for about 3 days.
It takes about 6 hours to dry garlic slices, and the material ratio of the whole process is 2.3:1
